The Story

These Peruvian-inspired wings are all about bright, bold, and fresh flavor. Instead of heavy, sticky sauces, we’re going the citrus-forward route with a marinade built around fresh lime juice, garlic, cumin, and the star of the show, aji amarillo. That Peruvian yellow chile brings gentle heat and a fruity, slightly tropical flavor that pairs perfectly with smoky chicken.

The wings soak up this vibrant marinade, then hit the smoker where the citrus, spice, and smoke come together into something seriously addictive. The result is a wing that’s juicy, lightly smoky, tangy, and packed with layered flavor in every bite.

Thanks for pointing this out. I labeled above to do 1 bunch of cilantro instead of a cup but it might be more helpful to be specific.

Please note, the marinade also calls for 1 cup cilantro. It’s mentioned in the video but not reflected here.

I like the recipe, great video. I haven’t made it yet but my lazy ass will make a double batch of the base then add in the extras. Then get fighting drunk and burn the lot.
