Fire-Kissed Esquites
The Story
Traditional esquites are all about balance. Sweet corn simmered with garlic, onion, chile de árbol, and epazote until juicy and deeply flavorful, then piled into a cup with crema, cheese, lime, and hot sauce.
This version keeps that traditional street-vendor foundation but adds a live-fire twist through deeply roasted poblano and jalapeño peppers blistered directly over the flame.
That fire gives the esquites a subtle smokiness without overpowering the comforting, juicy texture that makes esquites different from elote. Instead of aggressive char on the corn itself, the roasted peppers melt into the mixture and add depth throughout the entire cup.
