The Story

Kansas City barbecue was not built around one meat, one sauce, or one perfect little competition cube. It grew out of a city packed with railroads, stockyards, packinghouses, working-class neighborhoods, and pitmasters who knew how to turn smoke, fat, time, and tough cuts into something worth lining up for.

These old-school Kansas City brisket burnt ends are inspired by that earlier tradition. Before burnt ends became glossy barbecue candy, they were the barky, fatty edges and scraps from smoked brisket, the kind of pieces pitmasters might snack on or hand out before people realized they were the best part.

This recipe keeps that older Kansas City spirit in mind with a brisket point, a simple pepper-forward rub, oak or hickory smoke, and a light coating of tangy Kansas City-style barbecue sauce inspired by the Henry Perry and Arthur Bryant lineage. The goal is not sweet meat cubes drowning in glaze. It is smoky beef, rendered fat, barky edges, pepper, vinegar, tomato, and burnt ends that taste like they came from a real barbecue joint instead of a candy shop with a smoker out back.
